Classic Caesar Dressing Recipe

Easy Caesar Dressing is creamy and delicious! A restaurant-style Caesar salad dressing made at home!

Do you like Caesar salad? Did you know that Caesar’s dressing was first made in Mexico? The salad’s creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. Cardini was living in San Diego, but he was also working in Tijuana, where he avoided Prohibition restrictions. His daughter Rosa recounted that her father invented the salad at his restaurant Caesar’s (at the Hotel Caesar) when a Fourth of July rush in 1924 depleted the kitchen’s supplies. As of lately, I prefer to make my food from scratch. Some you may know, I started a garden in my backyard, so I have been using all fresh ingredients for my meals. Caesar dressing is one of my favorites dressing for my salads. Since I’m cooking everything else from scratch at home, making my dressing wouldn’t be that hard. It only takes a few minutes, and I know every one of the fresh ingredients I use. This recipe does not use raw eggs, making it last longer in the refrigerator and safe for those with egg sensitivities to still enjoy this tasty dressing. Ingredients

2 Minced Garlic Cloves

1 Tsp anchovy Paste

1 Tsp Dijon Mustard

1 Tsp Worcestershire sauce

1/2 cup grated parmesan

1/4 Tsp salt

1/4 Tsp Black Pepper

2 Tbsp Lemon Juice

1/2 Tbsp extra Virgin Olive Oil

1 Cup Mayonnaise

Instructions

Whisk lemon juice, garlic, Worcestershire sauce, anchovy paste and Dijon mustard until well-combined.

Add in mayonnaise and whisk until creamy.

Stir in parmesan cheese, salt and pepper, add Olive Oil to make it smooth and it won’t best thick that you can’t pour the dressing.
