What Is Matcha:

Matcha is finely ground powder of specially grown and processed green tea leaves, traditionally consumed in East Asia. The green tea plants used for matcha are shade-grown for three to four weeks before harvest; the stems and veins are removed during processing. Matcha has undoubtedly become one of the world’s most unique culinary ingredients and one that I often like to use.

Amongst the many ways that Matcha can be used, one of my favorite things to make with this golden ingredient is this matcha raspberry latte.

Ingredients:

MATCHA LATTE

• 1 teaspoon matcha powder,

• 2 oz hot water

• 1 teaspoon liquid sweetener, e.g., agave nectar

• 6 oz milk, dairy or plant based (I prefer oat milk)

• ice

RASPBERRIES SWEET CREAM

• 6-8 Raspberries

• 2 oz heavy cream

• 1 oz milk

• 1 teaspoon sweetener

Directions:

MATCHA LATTE

In a small bowl, sift in matcha powder. Pour in hot water and whisk vigorously with a milk frother or bamboo whisk until dissolved and slightly foamy on top. Stir in your sweetener while it’s still warm.

Fill a glass about ¾ full with ice. Pour in milk and Matcha. Stir to combine.

RASPBERRIES SWEET CREAM

In a small bullet blender, blend raspberries, heavy cream, milk, and sweetener for 10-15 seconds until the consistency resembles melted ice cream.

Pour on top of the Matcha latte and give it a gentle stir to blend the layers.

Invest in a matcha whisk

The best way to have the matcha tea light is by aerating it. I highly recommend investing in a good

matcha whisk

or a small

milk frother

for aerating matcha teas, like those for lattes.

These tools help incorporate air into the tea, making it light. I love the convenience of a latte/ milk frother, but the aesthetic look of a matcha whisk is hard to beat.
